Applications:

1. Margarine

Function: Imparts fine and stable water dispersion.

Suggested dosage: 1% of oils and fats

2. Shortening

Function: Adjust oil crystal.

Suggested dosage: 1% of oils and fats

3. Protein beverage

Function: Improve stabilization of protein, oils and fats. Prevent delamination and sedimentation. Provide smooth mouth feel.

Suggested dosage: 0.5-1%

4. Dairy

Function: Promote dispersing of fats and prevent delamination.

Suggested dosage: 0.1%, usually with Span 60

5. Ice cream

Function: Improve shape retention. Provide foam stabilization.
